There is a place in Rome, not far from Palazzo Montecitorio, where food is not only only culture and tradition but also respect and honesty.
Ciao Checca is in fact a restaurant of slow street food of Roman cuisine with good and healthy ingredients from farms that respect the environment, territory and production cycles. And this same concept is applied not only to food resources, but also to work (of employees and suppliers), crockery (with containers of compostable cellulose pulp), furnishings (with low environmental impact appliances), waste and also to the customers, served with a street product cooked fast. And digestible.
What you can eat in Ciao Checca
The name of the restaurant comes from the famous Pasta alla Checca. Not a pasta salad (as many believe) but a delicious hot dish to eat with the spoon made of pasta (with or without gluten), bunch of tomatoes, buffalo mozzarella (instead of fior di latte), salt, oil, basil. All seasoned raw.
Among the other meals, tasty and timeless recipes from Liguria and Piedmont: Egg Tagliolini, served with a creamy pesto without garlic, and Ravioli of Borgon, with a Fondue of Castelmagno.
Beyond this Ciao Checca extends its menu pointing among others to a (tasty) Patty Melt Cheeseburger made with Bread from Forno Roscioli and fried onions with organic honey, the typical Chicken Chip Strips served with mayonnaise with citrus fruits and the Brandacujon stockfish (with a clear Genoese inspiration).
Among drinks you can find can not miss Centrifuges, Juices and Smoothies, as well as organic wine and homemade beer, and genuine and natural desserts as Cocoa Ricotta and cake of the day as the Carrot Cake.
